    Edamame marries goat cheese in this creamy, lightened-up Goat Cheese Edamame Dip recipe! Serve it as a healthy snack with chips or fresh cut veggies.

    If you like edamame as much as I do (who doesn't love eating an entire bowl of edamame?), you’re definitely going to flip over this dip! It’s creamy from the goat cheese, a tad spicy from the sambal oelek, a smidge citrusy from the Japanese yuzu juice, and it's super healthy. Plus, it comes together in less than 15 minutes!

    Just pulse all the ingredients for this Goat Cheese Edamame Dip in a food processor and scoop it into a serving bowl. That’s it! Gather your favorite chips or crunchy vegetables for dipping and you’ve got yourself a kickass healthy snack!

    A bowl of soybeans or soya beans with a light drizzle of melted butter and lemon. This variety is called Edamame and is commonly served in Japanese restaurants and some Chinese restaurants. This legume is gaining popularity outside of East Asia as a healthful food staple.

    Is edamame good for you?

    Edamame is a tasty, nutritious soybean legume that’s an excellent low-calorie snack option. There are several health benefits to eating edamame:

    • Edamame is high in protein. A cup (155 grams) of cooked edamame provides around 18.5 grams of protein.
    • Edamame may lower cholesterol. They're rich in healthy fiber and antioxidants.
    • Edamame is rich in vitamins and minerals.
    • Edamame may reduce the risk of breast and prostate cancer.

    How to make goat cheese edamame dip

    There are just a few steps to creating this super flavorful and healthy snacking dip!

    1. Place the shelled edamame in a food processor and pulse for about 20 seconds until it's chunky.

    2. Add in the goat cheese, sour cream, sambal oelek, yuzu juice, garlic, cilantro, and salt. Process until smooth and creamy, about 20 seconds.

    3. Serve with chips (I used blue corn tortilla chips) or fresh cut veggies for dipping!

    This rustic Goat Cheese Edamame Dip is an absolute fave in our house! I make extra batches to send home with my (adult) kids. They can't get enough!

    What to serve with goat cheese edamame dip

    Serve this yummy edamame dip with tortilla chips, pita chips, or fresh cut veggies. This dip is fairly thick, so you'll want something sturdy to scoop it up. It's also good as a sandwich spread, but you can get creative with this healthy dip!

    Tips & Tricks

    • You can make this Goat Cheese Edamame Dip a day in advance, or store in an airtight container for up to five days.
    • You can easily find edamame in the frozen vegetables section at most grocery stores.
    • If you can't find yuzu juice, freshly squeezed lemon juice will work fine.
    • Add in extra sambal oelek if you like it spicier. You can also substitute Sriracha sauce instead of sambal. 
    • Sambal oelek can be found at most grocery stores in the Asian section and at Asian markets.

    Ingredients

    Units Scale
    • 2 cups shelled edamame
    • 3 ounces soft goat cheese, room temperature
    • ¾ cup light sour cream
    • 1 tablespoon sambal oelek
    • 1 tablespoon yuzu juice (or juice from ½ lemon)
    • 1 clove garlic, roughly chopped
    • 3 tablespoons fresh cilantro leaves, roughly chopped
    • 1 teaspoon Kosher salt
    • Chips or fresh cut veggies for serving

    Instructions

    1. Place the edamame in a small pot of boiling water. Cook for 5 minutes, until edamame pods are tender. Remove from heat, drain, and place in a bowl to cool.
    2. In a food processor with an S-shaped blade, add in the edamame and pulse for 20 seconds. Scrape down the sides of the bowl. Add in the goat cheese, sour cream, sambal oelek, yuzu juice, garlic, cilantro, and salt. Process until smooth and creamy, about 20 more seconds. Taste for seasoning.
    3. Cover and refrigerate until ready to serve.
    4. Serve with a side of chips or fresh cut veggies.
