    Thai Basil Mint Cilantro Pesto

    This fragrant and delicious Thai Basil Mint Cilantro Pesto is so wonderful on just about anything! The basil, mint, and cilantro combined with the garlic, walnuts, and green curry paste gives it just the right amount of flavoring.

    Toss this pesto sauce in zucchini noodles, rice noodles, everything noodles! Spread it on top of chicken, salmon, flaky white fish, shrimp -- endless possibilities!  How will you choose?

    Thai basil is super fragrant in this pesto sauce! You can use regular basil as a substitute.

    Fresh cilantro and mint are also fresh ingredients in this easy pesto sauce. Add some other herbs or greens if you'd like (ie, spinach or kale). It's all good!

    This fragrant and delicious Thai Basil Mint Cilantro Pesto is so wonderful on just about anything! The basil, mint, and cilantro combined with the garlic, walnuts, and green curry paste give it just the right amount of flavoring.

    Ingredients

    Units Scale
    • 1 cup fresh Thai (or regular) basil
    • 1 cup fresh cilantro
    • 1 cup fresh mint
    • 2 cloves garlic
    • ¼ cup walnuts
    • 1 teaspoon fish sauce
    • 2 tablespoons green curry paste
    • Juice from 1 lime
    • ¼ cup extra virgin olive oil

    Instructions

    1. Place all ingredients, except olive oil, in a food processor and pulse until smooth.
    2. Drizzle in the olive oil to form the pesto. Taste for seasoning.
    3. Store in the fridge or freeze until ready to use.

    Notes

    • You can substitute Thai basil for regular basil.
    • Freeze in a container for up to three months.

      This pesto is easy to make, versatile and very yummy! I added it to seaweed penne pasta and shrimp sprinkled with Bangkok seasoning from Penzeys.
