Here's the only way to describe these unique Boozy Coconut Chili Lime Popsicles -- an explosion of flavor on your tongue! They're sweet, sour, spicy, boozy, and refreshingly delicious! Perfect for the warm weather ahead!
I filled these popsicles with some white rum (yep, rum freezes!), but you can leave out the booze for a virgin pop. But seriously, what's the fun in that? 😜 I used Bacardi Silver Rum in these pops.
How to make Boozy Coconut Chili Lime Popsicles:
- Add to a blender one can of coconut milk, zest from one lime, juice from two limes, ¼ cup white rum, ½ cup simple syrup, 2 Thai chili peppers (seeded and chopped), and one tablespoon fresh mint.
- Pulse in the blender until smooth.
- Add in a ¼ cup of coconut flakes and pulse lightly so mixture is still chunky with the coconut flakes.
- Place evenly into popsicle mold and freeze overnight.
- When ready to serve, run the popsicles under hot water for 30 seconds to release them from the mold.
Red Thai chili peppers give these pops a spicy kick.🌶 Just a smidge to get your tastebuds tingling! You can find these peppers at select grocery stores like Whole Foods, or at Asian markets. If you can't find them, substitute with red or green jalapeño peppers.
How to make Simple Syrup:
Simple syrup is a commonly used ingredient in many cocktails and other drink recipes. It’s great to have on hand!
- Pour equal parts water and sugar in a small saucepan over medium heat (ie. 1 cup sugar / 1 cup water).
- Stir continuously until sugar dissolves into the water. Cool completely before using.
- Store in the refrigerator for up to one month.

TIPS & TRICKS:
- You can use white rum for these popsicles. The quality of the rum should not matter, but using a darker rum will change the color of these pops.

Ingredients
- 1 can coconut milk (13.5 oz.)
- Zest from 1 lime
- Juice from 2 limes
- ¼ cup white rum
- ½ cup simple syrup

- 1 tablespoon fresh mint, chopped
- ¼ cup shredded coconut flakes
