    Matcha Green Tea Waffles

    Who wants ordinary waffles when you can have these amazing Matcha Green Tea Waffles instead? Wow, they are so delicious and easy to make with your trusty waffle maker!

    These matcha waffles are so fluffy from the whipped egg whites, and a bit crispy on the edges. The matcha flavor is very subtle and gives the waffles a nice greenish hue. Aren't these matcha green tea waffles the prettiest things?

    My mother-in-law had given me her tried-and-true waffle maker that she's used for probably more than 50 years. The plug was a bit scary but it didn't spark and cause a fire, thank the lord! But I have to tell you, the waffles came out perfectly!

    Some waffle makers have squares and some have rounds. Either way, these waffles will cook up beautifully with whatever appliance you use!

    Matcha powder is finely ground powder of specially grown and processed green tea leaves. Here are some health benefits of match powder:

    These matcha waffles are fluffy and tasty, especially with the fresh blueberries and organic maple syrup toppings! This recipe is super easy to prepare, either in a mixing bowl or a blender if you prefer. I used my mixing bowl and the batter was ready in 10 minutes. Betcha can't eat just one waffle square!

    These Matcha Green Tea Waffles are a healthy twist to your average breakfast waffle. Top with fresh blueberries and a drizzle of organic maple syrup!

    Ingredients

    Units Scale
    • 2 cups all-purpose flour (or gluten-free flour)
    • 2 tablespoons matcha powder
    • 2 tablespoons sugar
    • 2 tablespoons baking powder
    • ½ teaspoon salt
    • 2 cups light coconut milk
    • 2 large eggs, separated
    • 2 teaspoons vanilla extract
    • Cooking spray
    • 1 cup fresh blueberries
    • Organic maple syrup

    Instructions

    1. Heat a waffle maker on high heat or according to the waffle maker’s instructions.
    2. Sift the dry ingredients into a mixing bowl (flour, matcha powder, sugar, baking powder, and salt). In a small bowl, whisk the egg whites until soft peaks form and set aside.
    3. In another large mixing bowl whisk together the egg yolks, coconut milk, and vanilla extract. Slowly add the dry ingredients into the wet ingredients, mixing well to combine and gently fold in the whisked egg whites.
    4. Using a ladle, scoop the batter one ladle at a time into each section of the waffle maker, close the lid and cook for about 5 minutes, or until the edges start to turn golden brown. Repeat until all of the batter is used up.
    5. Top the matcha waffles with fresh blueberries (or mixed berries) and drizzle with organic maple syrup. Makes approximately 10 to 12 waffles.

    Notes

    These waffles will freeze well for up to 3 months, if you have any leftovers!
