I'm not kidding when I say this mango coconut popsicle recipe is the easiest thing ever! There are just four ingredients! But you can always jazz it up with other ingredients too. Here's what you'll need for my mango popsicle recipe:
- Mangos (fresh, or a bag of frozen mangos chunks)
- Coconut yogurt (sweetened or unsweetened depending on how sweet you like it). I used this brand of coconut yogurt that has a low sugar content.
- Limes
- Organic maple syrup

Additions and substitutions
- Add some fresh mint to the blender for another flavor profile.
- Add in some crushed pineapple for a taste of the Caribbean!
- Throw in a ¼ cup of shredded coconut for texture.
- Fresh mangos have the most flavor, but if you can't find fresh you can always use a bag of frozen mango chunks. You can usually find them in the frozen fruit section at most grocery stores.
- I froze my cut-up mangos for about an hour, which helps to keep the popsicle sticks in place. It also helps the popsicles freeze quicker.
- Use a cup of full-fat coconut milk instead of yogurt for a creamier, coco-nuttier option.
- You can use the same amount of agave nectar or honey instead of maple syrup. Your preference!
- If you don't want the extra sweetness (because ripe mangos are super sweet), you can eliminate the maple syrup altogether.

2. Then, add in the coconut yogurt, maple syrup, and juice of two limes. Purée until smooth and creamy.
3. Fill a popsicle mold with the mango coconut purée. Add the popsicle sticks before freezing.
4. Freeze for at least 4 hours, or overnight. Enjoy!
