    Sushi Avocado Toasts

    I've been dreaming up these Sushi Avocado Toasts for a while now, so I figured I'd better get down to business and create something! What could be better than fresh, sushi-grade salmon and tuna on a bed of mashed avocados on sliced toast? Actually, it is "the best thing since sliced toast!"

    I love all things sushi and really needed to think outside the "bento box!"🍱 I sprinkled some of Trader Joe's Everything Bagel Seasoning on top of the fish, along with chopped chives, salmon roe (caviar), and nori (seaweed) strips. You'll thank me later, as well as everyone that tastes this! These Sushi Avocado Toasts are TWO THUMBS UP! 👍👍

    These beautiful Sushi Avocado Toasts are almost too pretty to eat! Any way you layer them you can't go wrong with the presentation and flavor!

    How to make Sushi Avocado Toasts:

    1. Cut the sushi-grade tuna and salmon into small, even cubes. Next, mash the avocados in a small bowl. Set both aside.
    2. Slice the bread into ¼ -inch slices and spread on a baking dish. Brush each slice with the avocado oil (or olive oil) and toast in the oven until golden brown.

    Beautiful cubes of sushi-grade salmon and tuna are the star of this Sushi Avocado Toast appetizer! Try Whole Foods, Fresh Market, or your local Asian market for the freshest sushi-grade fish.

    I used just-ripe avocados to mash for these Sushi Avocado Toasts. Don't mash until you're ready to assemble, or squeeze some lime juice on top so they won't get brown!

    A fresh loaf of French bread or brioche will do just fine in this recipe. Even sour dough will work! Toast the slices until golden brown.

    Add the toppings:

    • Spread about a tablespoon of avocado mash onto each slice of toasted bread. Then put a layer of the tuna and salmon on top of the avocado mash. Sprinkle with everything bagel seasoning and top with a dollop of the salmon roe.
    • Garnish with chopped green onions or chives, and nori (seaweed) strips.

    I love Trader Joe's Everything Bagel Seasoning! It works so well in this appetizer with just the right amount of salt. If you can't find nori (seaweed) strips at your local grocery store, try your Asian market or Amazon.

    I can guarantee you that your dinner guests will be discussing this gorgeous Sushi Avocado Toasts appetizer over the water cooler for days!

    TIPS & TRICKS:

    • I purchase my sushi-grade salmon and tuna at Whole Foods, Fresh Market, or my local Asian market.
    • If you can't find sushi-grade tuna for this recipe, you can always use smoked fish like salmon or white fish. Although you won't be able to call it Sushi Avocado Toasts! 😜
    • I used French bread for this recipe but choose whatever bread you'd like. Brioche, or sour dough will work just as well!
    • Make sure your avocados are ripe, but not overripe. You really don't want to use a mushy squishy avocado! 🥑

    Ingredients

    • 7-ounce sushi-grade tuna filet
    • 7-ounce sushi-grade salmon filet
    • 2 ripe avocados, pitted
    • 1 loaf French bread (or other long loaf bread)
    • Avocado oil (or olive oil) for brushing
    • 1 tablespoon everything bagel seasoning
    • 2 tablespoons salmon roe (ikura)
    • 3 green onions or chives, thinly sliced
    • Nori (seaweed) strips for garnishing

    Instructions

      Oh boy, I am so jealous, that fish looks to die for... My local 'Asian' store is a good 3/4 day drive there and back which kinda takes the sheen off Sushi grade fish 😉

        Solution: Use smoked salmon on top, or crab, or shrimp. I'm sure it would be just as good!!
