    These beautiful, healthy Brussels sprouts were 'roasted' in the air fryer, vs. the oven, for even heat and a quicker cook time. Such a time-saver! And, coating the sprouts with a sticky Korean gochujang sauce makes these little cabbages spicy, savory, and slightly sweet, with so much complexity!

    Ingredients you'll need for air fryer brussels sprouts

    • fresh Brussels sprouts
    • extra virgin olive oil
    • kosher salt and black pepper
    • gochujang paste
    • sesame oil
    • rice vinegar
    • honey
    • toasted sesame seeds
    • fresh cilantro

    HELPFUL TIP: When buying Brussels sprouts, try to choose sprouts similar in size to ensure they will cook evenly and for the same amount of time. I used medium-sized Brussels for this recipe.

    Variations and substitutions

    • Frozen Brussels sprouts. I've seen some air-fryer recipes that use frozen instead of fresh. I've never tried this method, but give it a go! You'll probably have to cook them longer than fresh.
    • Oils. I used olive oil in this recipe, but you can certainly use avocado, vegetable, or canola oil.
    • Other spicy sauces. If you're not a fan of Gochujang, try using Sriracha sauce, sweet chili sauce, or even sambal oelek for a different flavor profile.
    • Other sweetners. Swap out the honey for maple syrup for a slightly different sweet flavor.
    • Other vegetables. You might want to make this recipe with other vegetables too! Try it with cauliflower, carrots, sweet potatoes, or parsnips.

    There are just four ingredients in this sweet and savory Korean Gochujang sauce. You can always make this sauce in advance.

    What is korean gochujang?

    Korean Gochujang is a popular fermented chili paste that is widely used in Korean cuisine. It's made with red chili peppers, glutinous rice, fermented soybeans, and salt, and has a complex and robust taste profile. Gochujang is a staple in Korean households, and an essential element of Korean cuisine. Gochujang paste can be found in the Asian products section at most grocery stores, or here, on Amazon.

    How do you make air fryer brussels sprouts?

    The air fryer is nothing new, but properly prepared, Brussels sprouts are one of the best vegetables to use in an air fryer. This gluten-free recipe could not be easier. Just follow these simple steps!

    1. Trim the tough edge of the Brussels sprouts and slice in half.

    2. Place them in a large mixing bowl, and toss with oil, salt, and pepper.

    3. Air fry the Brussels for about 7 minutes, depending on your air fryer.

    5. Put the coated Brussels sprouts back into the frying basket, and air fry another 7 to 8 minutes.

    4. Remove from the air fryer and toss into the Gochujang sauce.

    6. The Brussels sprouts are done when they are golden and crispy. Air fry an additional 2-3 minutes if necessary.

    Storage

    Store any leftovers in an airtight container in the fridge for up to three days, or freeze for up to 4 months. Reheat this dish in the oven at 375 degrees, adding more sauce if desired.

    Can you cook frozen Brussels sprouts in the air fryer?

    Yes, you can air fry frozen sprouts, but they won’t get as caramelized or crispy unless you cook them longer. Adjust the cooking time as needed.

    Why did my Brussels sprouts burn in the air fryer?

    If you don't shake the air fryer basket throughout the cooking process, you risk the sprouts burning before they are fully cooked.

    Ingredients

    Units Scale
    • 1 pound fresh Brussels sprouts (trimmed and halved)
    • Kosher salt and black pepper
    • 1 tablespoon extra virgin olive oil
    • 1 tablespoon Gochujang paste
    • 1 tablespoon sesame oil
    • 1 tablespoon rice vinegar
    • 1 ½ tablespoons honey

    Garnish:

    • toasted sesame seeds
    • fresh cilantro

    Instructions

    1. Preheat the air fryer to 400F degrees.
    2. Place the halved Brussels sprouts into a large mixing bowl. Toss the sprouts with the oil, and a sprinkle of salt and pepper.
    3. Add the Brussels sprouts to the basket of an air fryer in a single layer. Place in the preheated air fryer and cook for 7 minutes (tossing halfway through).
    4. While the Brussels sprouts are cooking, whisk together the Gochujang paste, sesame oil, rice vinegar, and honey in a small bowl until well-combined. (Set aside about ¼ of the sauce for later.)
    5. Remove the Brussels sprouts from the air fryer and toss them into the bowl with the Gochujang sauce, coating thoroughly.
    6. Transfer the Brussels sprouts back into the air fryer basket and cook another 7 to 8 minutes, until they're caramelized and browned on the outside, and tender on the inside. (Cook another 2 minutes if necessary.)
    7. Transfer to a serving bowl and drizzle with the reserved Gochujang sauce. Garnish with sesame seeds and cilantro. Serve while warm.
