Sushi-grade salmon is required for this dish. If you can't locate sushi-grade fish then sear it up. It's just as good! And you can use whatever sushi-grade fish you can find.

Making sushi rice (short-grain rice) is not as hard as you think! If you have a rice cooker it's even easier! See how to make it below.
How to make perfect sushi rice
- Thoroughly rinse 1½ cups of sushi rice (short-grain) until water is clear and not muddy. Place in a rice cooker, along with 2 cups water. Cook until the button pops up and the light changes to “warm.”
- Meanwhile, in a small sauce pot, combine 3 tablespoons rice vinegar, 2 tablespoons sugar, and 1 teaspoon salt. Dissolve over medium heat but do not boil. Remove from heat and stir. Set aside to cool. Once rice is finished, let it sit in the steamer for 5 minutes. Remove rice and place into a wooden, or non-reactive bowl. Using a wooden or plastic paddle, gently fold in the vinegar mixture until well combined. Do not squish the grains! Let the rice cool to room temperature before using.
You can experiment with this Sushi Rice Bowl, using whatever toppings appeal to you. I used avocados, cucumbers, green onions, nori (seaweed) strips, sesame seeds, and pickled ginger.

Recipe notes
- I picked up sushi-grade salmon from my local Asian market, but Whole Foods always carries sushi-grade salmon and tuna, and Fresh Market always has sushi-grade tuna. Make sure it's very, very fresh!
- I suggest using a rice cooker for making the sushi rice. It's pretty no-fail.
- Get creative with this Sushi Bowl! Throw on top whatever appeals to you, or whatever you have in your fridge!
- I like to have a side of low-sodium soy sauce on the side for drizzling, but for an extra kick use Sriracha sauce.

Salmon Sushi Bowl

Ingredients
- 2 cups room temperature sushi rice (cooked according to package directions)
- 10 ounces sushi-grade salmon, cubed
- 1 large Hass avocado, sliced
- 2 Persian cucumbers, sliced
- 3 green onions, chopped
- Pickled ginger
- Nori (seaweed) strips
- Black and white sesame seeds
- Low-sodium soy sauce for drizzling
Instructions
- Divide the sushi rice into two shallow bowls.
- Top each bowl evenly with the cubed salmon, avocado slices, cucumbers, and green onions.
- Place a tablespoon of pickled ginger in the middle of the bowl.
- Sprinkle the sushi bowls with nori strips and sesame seeds.
- Serve with a side of low-sodium soy sauce for drizzling.
