The Sushi Waffle has gone viral crazy! Yet another TikTok food trend, sushi rice waffles are so versatile, allowing you to be as creative as you like with the ingredients. And, they're incredibly easy to make!
This Sushi Waffle recipe was inspired by my Spicy Tuna Crispy Rice. This Nobu Restaurant copycat recipe features pan-fried crispy rice cakes topped with slices of sushi-grade tuna and creamy avocado, finished with a drizzle of spicy Sriracha aioli sauce. Another creative way to use crispy rice!

Ingredients for the sushi
I used sushi-grade salmon and tuna for the base, and just four ingredients for the marinade. Here's what you'll need:
- sushi-grade salmon
- sushi-grade tuna
- reduced-sodium soy sauce
- rice vinegar
- sesame oil
- fresh ginger

WHERE DO YOU FIND SUSHI-GRADE FISH? You can usually find sushi-grade fish at specialty stores like Costco, Whole Foods and Fresh Market. Or, try your local seafood market.
Substitutions
Need to make this gluten free? Simply sub out the soy sauce for gluten-free soy sauce, coconut aminos, or tamari.
Ingredients for the rice waffles
Feel free to create your own sushi waffles masterpiece! These are the ingredients that I used in this recipe:
- cooked white rice
- rice vinegar
- mirin
- avocado
- scallions
- furikake seasoning
- salmon roe (caviar)
- Sriracha aioli sauce

How to make sushi waffles
After making the rice waffles in a mini waffle maker, simply layer them with the mashed avocado, marinated salmon and tuna, and all the toppings.
1. Spray the waffle maker with cooking spray.
2. Stir the rice vinegar and mirin into the cooked rice.
3. Evenly press the rice into a preheated, mini waffle maker.
4. Cook the rice in the waffle maker until crispy on the edges.
5. Cube the sushi-grade salmon and tuna.
6. Mix the fish with soy sauce, rice vinegar, sesame oil, and ginger. Marinate for 5 to 10 minutes.
7. Spread the avocado onto the rice waffle.
8. Layer the waffle with the salmon and tuna.
9. Top with sliced scallions, and sprinkle with Furikake seasoning.
10. Place a spoonful of salmon roe (caviar) on top.
11. Drizzle the aioli sauce over the top of the sushi waffle.
12. Ta da! A beautiful sushi waffle! Ready to eat!
TOP TIP: Make sure to cool the rice waffles before assembling. You don't want those layered ingredients to get warm!

- Don't eat raw fish? You can always use cooked seafood, like smoked salmon, crab meat, and shrimp.
- Make it vegetarian. Layer the rice waffle with chopped cucumbers, pickled onions, shredded carrots, and tofu!
- Not a fan of white rice? Use brown rice instead.

Storage for leftovers
- Store any leftover salmon and tuna mixture separately in a tightly sealed container in the fridge for no more than 2 days.
- The rice waffles will not save well. You'll need to make a fresh batch of rice waffles when making any leftovers.
- These ingredients do not stand up well to freezing.

Ingredients
For the rice waffles:
- cooking spray
- 1 cup cooked white rice (or sushi rice), room temperature
- 1 tablespoon rice vinegar
- 1 tablespoon mirin
For the sushi mixture:
- ½ pound sushi-grade salmon, cubed
- ½ pound sushi-grade tuna, cubed
- 2 tablespoons reduced-sodium soy sauce
- 1 tablespoon rice vinegar
- ½ teaspoon sesame oil
- 1 teaspoon fresh minced ginger
For assembling the sushi waffles:
- 1 large avocado, halved, pitted and mashed
- 2 tablespoons green onions, sliced
- 1 teaspoon Furikake seasoning
- 2 teaspoons salmon roe (caviar)
For the aioli sauce:
- 1 teaspoon Sriracha sauce
- 1 tablespoon mayonnaise
Instructions
Make the rice waffles:
- Spray both sides of a mini waffle maker with cooking spray. Preheat the waffle maker.
- Stir the rice vinegar and mirin into the cooked rice.
- When the waffle maker is ready, gently press about ½ cup of rice into the waffle maker, making sure the rice is evenly spread out to the edges.
- Close the lid and cook until desired crispiness, about 5-6 minutes, until crispy and slightly golden-brown on the edges.
- Carefully lift the rice waffle out of the waffle maker and let cool on a plate.
- Repeat to make the second rice waffle.
Make the marinade:
- Whisk together the soy sauce, rice vinegar, sesame oil, and ginger in a mixing bowl.
- Add in the cubed salmon and tuna and toss to coat. Marinate for 5 to 10 minutes.
Make the aioli sauce:
- In a small bowl, whisk together the Sriracha sauce and the mayonnaise until well-combined.
Assemble the sushi waffles:
- To assemble the sushi waffles, start with a layer of mashed avocado.
- Add a layer of the salmon and tuna mixture.
- Sprinkle with scallions and Furikake seasoning.
- Place a teaspoon of salmon roe on top. Drizzle with desired amount of Sriracha aioli.
- Repeat to make the second sushi waffle.
